‘Bespoke experience’: Longtime Palm Beacher expands caviar business on island, nationwide

A lifelong love of caviar spurred a longtime Palm Beach resident to launch a business devoted to the salty delicacy.

Altima Caviar, founded in 2022 by public relations executive Maribel Alvarez and her children, Robert Riva and Alexis Posada, supplies premium caviar to retailers, caterers, restaurants and individuals around the country.

The company, which sources its product from sustainable farms around the world, has built a roster of more than 170 clients during the past 18 months, including La Goulue and BiCE restaurants and the Mary Mahoney Store on the island.

Altima also counts numerous individual clients in Palm Beach, who have discerning tastes when it comes to caviar, Alvarez said.

“Palm Beachers do their homework before they support a brand,” said Alvarez, who runs West Palm Beach-based Altima Palm Beach Public Relations. “They trust that Altima has a history with them. They like the bespoke experience. I’ve been living here since 1989, and my kids grew up here. I’ve been working in the bespoke arena, and Palm Beachers want to taste. They like to know I’ll go do blind tastings with them. I have fun with them.”
