The dream behind Pomodoro began in New York City, where the founding family, New York City immigrants in the early 1980s, worked in restaurants where they crafted an idea rooted in what they value most, teamwork and camaraderie. Their first restaurant, located in Aurora, aimed to serve a diverse range of quality Italian fare, catering to Coloradans of finer tastes.

Founders Luis and Gloria Enriquez, along with Gloria’s cousin, Jesus, combined decades of experience in both the front and back of house to create something truly special.
