Texas-based chain targets 2027 opening as it expands to NC

RALEIGH — A Texas doughnut chain known for its hot glazed doughnuts and savory kolaches is preparing to expand into the Triangle, adding another fast-growing restaurant brand to the region’s competitive breakfast market.

Houston-based Shipley Do-Nuts has signed a two-unit franchise agreement with Plexus Raleigh LLC, led by Hillsborough entrepreneur Dana Norman. The group plans to open its first Triangle location in 2027, followed by a second in 2028. Exact locations have not yet been selected.

The expansion will build on Shipley’s recent entry into North Carolina. The company opened its first store in the state in Concord, just north of Charlotte, in February 2025 and has identified North Carolina as a key growth market as it pushes beyond its traditional Texas footprint…
