As her business continued to grow and she needed more space, Lauren Shaffer knew Hudson was the community where she wanted to set up shop.
“I have always wanted to be in the Hudson area because I love the community so much,” Shaffer said. “My first restaurant job was at North End in Hudson. This is our fifth year in business, and we were operating out of a warehouse space in Bedford Heights, but we had outgrown that space, and we were looking for a new location.”
Shaffer said one of her regular customers worked in commercial real estate and helped her to find a wonderful spot in Hudson.
“We have been here since October,” she said. “We moved into the space next to The Red Twig.”…
