CLIFTON PARK — A transplant from the Eastern Shore of Maryland with a lifelong love of angling is developing Oyster & Fin Seafood Market, projected to open in mid- to late October in a retail plaza on Route 146.
Shannon Thompson, who moved to the Capital Region about three years ago, is finalizing work on the business with her daughter, Tyler Hannon. In addition to a selection of fish, shellfish and other seafood including caviar, the store will offer a handful of ready-to-eat items including lobster rolls, poke bowls and other preparations made from seafood that has been steamed and chilled, including shrimp salad, Thompson said. As the business grows and customer demand becomes clearer, the market expects to prepare seafood-based take-and-bake entree options for cooking at home, she said. There will be no fryer, no hot meals except for a hot lobster roll and no indoor tables, though they may add a few cafe tables outside what was a tax-preparation business in a building shared with a bank branch, according to Thompson.
