BETHLEHEM, Pa. – Lehigh Valley foodies in search of chimichangas, enchiladas and other Mexican specialties will have a new spot to frequent in the new year. Don Carlos Fine Mexican Food & Tequila Bar, a full-service restaurant offering authentic, made-from-scratch Mexican cuisine, is expected to open in the first quarter of 2025 at 1406 Center St. in Bethlehem.
