How A New Euless Salad And Go Opened, Then Quickly Closed

SprawlTag first covered the planned Salad and Go in Euless on February 21, 2024, before the restaurant opened at 2120 Rio Grande Boulevard. The small drive-thru was built near Highway 121, Cheek-Sparger Road, and Little Bear Creek. It opened as part of a growing retail area near Glade Parks.

The story changed quickly. The location later appeared on closure lists as Salad and Go pulled back from several Texas sites. The images below use Google views to show how the property changed over time. The timeline starts in 2001, when the site was still open land near the creek.

By 2024, Salad and Go had opened on the corner. The building remained in 2025, but the restaurant had already closed. Nearby H-E-B construction was underway, showing that this part of Euless kept growing even after the Salad and Go shut down.

Timeline

In February 2001, the future Salad and Go site was still open land. It sat near Little Bear Creek, Highway 121, and Cheek-Sparger Road. The restaurant pad, retail cluster, and later H-E-B activity had not arrived yet. This view shows the creekside highway corner before newer development filled in.

By January 2018, the future Salad and Go site was still an empty roadside pad. Little Bear Creek and its trees sat behind the property. Construction fencing along Brazos Boulevard hinted that development was getting closer. The site still had no restaurant, but it was no longer just untouched open land.

In December 2024, Salad and Go was open at 2120 Rio Grande Boulevard. The small drive-thru building sat beside Little Bear Creek, with fresh landscaping and new sidewalks around the site. The setting still had a creekside feel, even as the restaurant joined the growing retail area near Highway 121 and Cheek-Sparger Road.

The November 2025 aerial view shows the former Salad and Go site after the restaurant’s short run in Euless. The small building remains at 2120 Rio Grande Boulevard, tucked between Little Bear Creek and Highway 121. West of the creek, H-E-B construction was underway, showing that the broader retail area was still growing even as this Salad and Go location had already closed…
