Heritage Park Gilbert Announces First Five Tenants

Heritage Park, a new mixed-use development taking shape at the northern gateway of Gilbert’s Heritage District, has announced its first five tenants ahead of planned early second-quarter 2027 openings. The initial lineup includes Arizona’s first Popup Bagels, along with East Valley debuts for La La Land, Hudson House, and [solidcore]. Salt & Straw will also join the development, expanding its presence in the Phoenix metro area.

First Arizona and East Valley Locations

Popup Bagels will make its Arizona debut at Heritage Park with a 1,994-sq.-ft. location. The concept began in Westport, Conn., and has since expanded beyond its East Coast roots with a simple approach centered on freshly baked bagels.

Rather than an extensive menu or elaborate sandwiches, Popup Bagels focuses on hot, whole bagels designed to “grip, rip and dip” into a selection of schmears. The Gilbert shop will introduce the growing brand to Arizona for the first time.

La La Land, which currently has locations in Arcadia and Kierland Commons, will open its first East Valley cafe in a 2,372-sq.-ft. space. The cafe’s menu includes coffee, matcha, pastries, and other drinks. The company also operates a paid internship program designed to support young people transitioning out of the foster care system and into adulthood.

Hudson House, an elevated neighborhood restaurant from Vandelay Companies, will occupy nearly 8,000 square feet at Heritage Park. Inspired by New York’s West Village, the restaurant will be one of two Hudson House locations planned for Arizona. The restaurant’s East Coast-influenced menu includes oysters served from a sit-down raw bar, along with fish tacos, chicken parmesan, and a cheeseburger featuring thin-seared patties and house sauce. A large wraparound bar will serve a martini program that includes the brand’s signature “World’s Coldest Martini,” with varieties such as Bleu & Gold and Stone Fruit.

Ice Cream and Fitness Join the Mix at Heritage Park
