The hearth imparts rich smoky flavors to dishes such as ember-cooked souvlaki, whole grilled Mediterranean dorade with ladolemono, milk-braised lamb shank with orzo and a light cherry tomato–vodka sauce and octopus with a crisp char served over a gigante bean purée with herb-forward salsa verde.
