CLEVELAND, Ohio – The Waterloo Arts District is getting a little busier with updated entertainment. The former Boardwalk bar has been transformed into Roux, a new restaurant with casual elegance and an elevated, but approachable menu. The only original surface in the room is the bar top.
The driving force behind the changes are new owners Max Kogan and Martin Millonzi, two 30-somethings who met while tending bar at The Standard on East 185th St.
Both have been working in restaurants since their teens. Millonzi started at John Palmer’s in Concord and has worked in Cleveland kitchens. Kogan worked in New York City and San Diego restaurants while pursuing acting and music goals. He returned to Northeast Ohio to be near family…
