Hot Garbage Pizza, name and all, is slated to arrive this summer in Old Ellicott City’s historic core with a carryout-first game plan built around a family favorite called “Grandma’s garbage.” Founder Geoff Gill says the shop will lean hard on quick pickup and local delivery, serving classic margherita, pepperoni, and white pies, plus a rotating seasonal special.
He also plans to make the storefront fully wheelchair accessible, describing it as one of the few buildings on Main Street that will be completely navigable for people with disabilities.
Family recipe becomes a storefront
The offbeat name traces back to Gill’s family pizza nights, where the “Grandma’s garbage classic” became the go-to pie and will now anchor the shop’s menu, according to The Baltimore Sun. The paper reports that Hot Garbage Pizza will serve margherita, white, and pepperoni options alongside that seasonal special, and that Gill has brought in a general manager who previously helped build Baltimore’s Underground Pizza and The Social in Severna Park.
The Baltimore Sun also notes that Gill is targeting a late July or August opening and that the Howard County liquor board has already approved a beer, wine, and liquor license for the spot.
Who’s behind it
