Grey’s Diner is serious about casual comfort foods

Born in Trieste, Italy, Samuel Diminich immigrated to the United States, coming through Ellis Island and landing in Queens, New York. Lacking a formal education but equipped with a passion for people, he fell in love with hospitality and taking care of others. His grandson, Sam Diminich, remembers his fondness for telling jokes and stories — and of course, making spaghetti.

It turns out that hospitality is the family’s love language. Sam has spent his career following that inheritance — from his grandparents’ kitchen to his two Charlotte restaurants, each named after his children. His story begins with his “granddaddy,” whose path to the kitchen started after his arrival in the States.
