NISKAYUNA, N.Y. (NEWS10) — A new restaurant is coming to Niskayuna. Sally’s Diner will be opening in the Senior Center building at Rivers Ledge Apartments at 2837 Aqueduct Road.

Sally’s will be run by Jack Kowalski, the owner of Bud’s on Jay, Bud’s on the Hudson and Bud’s Glenville. Rivers Ledge Apartments is owned by Luizzi Companies.
The diner recieved site plan approval from the Niskayuna Planning Board during their July 13 meeting. An ice cream parlor will take up part of the space, said Christian Luizzi of Luizzi Companies during the meeting, but that will have a different operator and require a separate application with the planning board.

According to the site plan application, Sally’s will be a 1960s-style diner serving separate breakfast, lunch and dinner menus. Kowalski plans to have the restaurant open Monday through Sunday from 7 a.m. to 7 p.m.
Luizzi told the planning board that the opening date for the diner is as soon as possible. Kowalski previously told NEWS10 that he was planning a diner in Niskayuna that was going to open in 2026. Kowalski did not immediately respond to NEWS10’s request for comment…
