Sticky, savory, sweet, and in the suburbs—this new upscale comfort food restaurant with true barbecue roots is soon opening in Waltham. And the partners behind the concept, in the former home of Da Vinci Ristorante, come with prime pedigrees. Chef/partner Dan Lane once rounded up brisket and baby back ribs at western-themed barbecue spot Bison County in Waltham, while partner Michael Culpo marinated for a while at craft pub Tack Room in Lincoln. If the dishes they’ve been teasing online are any indicator, here’s hoping smoked candy apple and pineapple-habanero pork belly makes the cut for the menu. Expect game meats and homestyle eats, too.
