A nearly $500,000 federal grant will allow the University of Delaware’s UDairy Creamery to expand its offerings and give food science students a chance to gain experience making additional dairy products.
The grant will pay for new equipment to be installed in the Genuardi Food Innovation Laboratory, the space in Worrilow Hall where UDairy’s ice cream and cheese is made.
“We make cheese right now. We age it in plastic, which works great,” said Jennifer Rodammer, director of operations for the creamery. “But to make some of those more artisanal specialty cheeses, you need a better aging environment. This grant is going to put funding into upgrading that space.”…
