I love making these fajita chicken sandwiches using these flatbread pitas. It is simple to make and a fast, one pan recipe. It is really versatile if you have a family member that likes fajita nachoes or fajitas on flour tortillas. You will need the following ingredients:
Recipe:
1 boneless chicken breast
1/4 of an onion
1/4 of a bell pepper
1 small jalapeno pepper
1/2 cup of shredded monterery jack cheese, or your favorite
salt and pepper to taste
1 teaspoon of oil
1 teaspoon of your favorite fajata seasoning
Toppings: letttuce, tomatoes, avocado ranch dressing, salsa, guacamole, sour cream
Preheat a medium skillet to medium high heat.
Trim and slice the chicken breast into thin slices and add it to the hot skillet. Season the chicken with salt, pepper and the fajata seasoning. Tip: If you do not want to use store bought, you can use homemade.
Slice the onion, jalapeno and bell pepper into thin slices. Add the vegetables to the skillet when the chicken is almost cooked through.
