When Andy Wysocki and Bill Sanderson opened Townie Bagels, they had one goal in mind: to bring great East Coast–style bagels to Palm Springs. As first-time cafe owners and fairly new to the bagel craft (lead baker Wysocki tested variations from his home kitchen before opening the shop in 2015), Townie Bagels has proved that dedication can lead to longevity in the desert with quality bagels, breads, breakfast and lunch sandwiches, as well as classic black-and-white cookies. Townie has a comfortable single room with a patio, where one thing remains constant: a long line sprawling from the entry. That’s because Townie has become the region’s most reliable spots to load up on baked goods or water-boiled bagels, whether dining on site or toting a dozen to a home freezer for future enjoyment.
