Inside Sushi by Bou: Cleveland’s newest omakase experience opens downtown (photos)

CLEVELAND, Ohio — Sushi by Bou (pronounced “boo”), Cleveland’s newest omakase restaurant, opened less than a week ago inside The Ritz-Carlton Cleveland. The intimate, sixth-floor space replaces a former event space across from Turn Bar + Kitchen.

Rooted in Japan, “omakase” translates to “I trust you, chef.” Instead of ordering à la carte, diners leave the menu entirely in the chef’s hands — and that menu can shift regularly based on seafood availability.

At Sushi by Bou, guests reserve a 75-minute seating and join a group of up to 12 around a sleek sushi bar. The room is enveloped in dark tones and moody lighting, anchored by a custom mural from internationally acclaimed artist Halim Flowers. Nearby, a simple display lists the evening’s featured bites…
