What’s Cooking: Mama Merce’s Kitchen highlights Filipino comfort food

HONOLULU (HawaiiNewsNow) – An Ewa-based family business is bringing delicious, homestyle Filipino food to Honolulu.

Mama Merce’s Kitchen serves authentic dishes through its food truck, pop-up events and catering service. Favorites include kare kare (peanut butter meat stew), kaldereta (tomato-based beef dish), beef steak, pinakbet with lechon, pork belly roll, fried chicken and chicken adobo.

Owners Edmund S. Laforga, Jr. and his wife Lorena run the food truck and named it after Edmund’s mother Mercedita Sacayanan, a single mother who immigrated to Hawaii from the Ilocos region in the Philippines.
