Inspector finds flies and hygiene problem at restaurant in The Villages

An inspector found flies and a hygiene problem during a recent visit to a popular restaurant in The Villages.

The inspector visited Redsauce at Lake Sumter Landing on May 5 and found four high priority violations and three basic violations, according to an inspection report on file with the Florida Department of Business and Professional Regulation.

The inspector spotted a female employee who touched her nose and then touched napkins without washing her hands, constituting one of the four high-priority violations. There were also 10 live flies in a dry storage room, raw beef stored over cooked pork chops in a cooler on the cookline and raw shell eggs stored above produce. There was also a problem with food stored above the required 41 degrees, including fish at 50 degrees and cooked mushrooms at 49 degrees…
