Chef, James Beard Award-winning cookbook author and former Food Network host Amy Thielen joined us for the latest edition of Cooking with the Cap Times, featuring an audience of Cap Times members.
At Furniture & ApplianceMart in Madison, Thielen demonstrated how to make three recipes from her cookbook “Company: The Radically Casual Art of Cooking for Others”: bitter lettuces with warm brown butter vinaigrette, fried shallots and duck gizzard confit; slow-smoked brisket pastrami with creamy zhug (a spicy, herby green sauce); and lemon nemesis, a semifreddo (like partially frozen ice cream) on a Ritz cracker crust with a toasted meringue top.
Along with the finished dishes, attendees at the May 13 event enjoyed a glass of 2023 Miguel Torres Ándica cabernet sauvignon, a Chilean red wine supplied by wine pairing sponsor Leopold’s Books Bar Caffè, as well as bourbon samples from Elijah Craig…
