Beloved Carolina Smash Truck Serves Its Last Gooey Grilled Cheese in Charlotte

Carolina Smash Truck, the Charlotte-area food truck known for its over-the-top grilled-cheese creations, is shutting down later this month. The owners say the truck’s final service will be Saturday, closing the book on a nine year run feeding hungry Queen City crowds.

As reported by the Charlotte Observer, the owners broke the news in an Instagram post last Thursday, writing, “Thank you to everyone who has supported us over the last 9 years. It’s been a great run, but it’s time for our next adventure!” The outlet also noted that CharlotteFive reached out to the truck for additional comment on May 15 but did not immediately hear back.

The truck built a devoted following with chef-driven riffs like the Southern Porky Mac, stacked with hickory smoked pork, cheddar mac and pimento cheese, and the Krak Melt, which layers bacon onion jam with roasted jalapeño pimento cheese and Muenster. The Carolina Smash Truck site lists an “OG” three cheese sandwich and notes that every order is finished with flaky salt, fresh herbs and house-made sweet pickles. The site also bills the operation as “Charlotte’s Favorite Grilled Cheese Since 2017.”
