One Tank Trip: Churubusco

CHURUBUSCO, Ind. (WANE) – After nearly a decade of serving Churubusco, Edwin Coe Spirits continues to grow and create in Whitley County.

Co-owners Joe and Kristin Collins started the business from Joe’s great-grandfather’s 1928 prohibition-style whiskey. The original recipe was a gift from Kristin to Joe on their wedding day. “I thought I shouldn’t let the recipe die with Grandpa, so I started making it in the garage, and now we’ve got nine working on 10 products in this whole tasting room and distillery,” Joe said.

Today, the distillery makes corn-based vodka, Caribbean-style white rum, soft gin, barrel-aged rum, old coe and high rye bourbon. “We’ve been leaning into housecraft cocktails for almost a decade now, so it’s just a really authentic experience in that you get the locally owned small business family kind of atmosphere,” Kristin said. “We have fantastic staff. They really care about your experience here, and so we just try to exceed everyone’s expectations in every way.”

One Tank Trip: Berne

If you find yourself in Fort Wayne on a Saturday morning, you can get a taste of Edwin Coe at the YLNI Farmer’s Market, where the distillery is set up at Brunch on Barr from 9 a.m. to 1 p.m. “We do serve up a pretty extensive mobile menu of our craft cocktails. You can come down and sample all of our spirits. We sell bottles down there. It’s a very fun vibe,” Kristin said.

Edwin Coe is open to the public on Fridays and Saturdays. Craft cocktails are on a seasonal rotation. The back patio is open to all ages and will remain open through September…
