A conversation with Jim McClung of Jimmy’s BBQ made me wonder: What is the meaning of “secret”? If you share your information freely, then there are no secrets. Right?
That would mean there’s no secret to McClung’s food or to his success. Because, as he noted, if you give someone else the exact same meat, ingredients, and cooking equipment (grill or smoker) that he has, the results will not be at all the same.
But when barbecue tastes as good and as satisfying as his does, there must be a secret, because perfection like this doesn’t just happen…
