How Lettuce from Mexico Became Linked to a Widespread Illness Outbreak

A recent outbreak of cyclosporiasis, an intestinal illness linked to contaminated iceberg lettuce, has sickened thousands across the United States. However, the culprit is not the lettuce itself, but the parasite Cyclospora cayetanensis found on it.

Cyclospora is a microscopic parasite that causes symptoms such as watery diarrhea and frequent bowel movements. It is resilient and can cling to produce in the field, resisting removal by washing or common sanitizers.

As of July 28, at least 6,707 cases of cyclosporiasis have been confirmed nationwide, with another 11,500 reported to the CDC. An FDA investigation traced the outbreak to iceberg lettuce served at Taco Bell restaurants, sourced from Taylor Farms operations in central Mexico. In response, Taco Bell, Walmart, and Sysco have all removed potentially contaminated lettuce from their supply chains, while health officials continue searching for other sources.

This incident has sparked renewed scrutiny of how produce is grown, processed, and imported into the U.S. Here’s an overview of the journey iceberg lettuce takes from Mexico to American tables:

This means contamination can happen at multiple points-from the field to processing, packaging, and transport-highlighting the importance of rigorous hygiene and sanitation throughout the supply chain.

Regarding imports, about 8% of lettuce consumed in the U.S. is sourced from abroad, with Mexico supplying roughly 88% of that imported volume. Domestic production is seasonal: California leads with two-thirds of the U.S. supply during April to October, while Arizona covers the off-season from November to March. Imports from Mexico help fill demand gaps when domestic production falls short.

In May 2024, the U.S. imported nearly 28,000 metric tons of lettuce from Mexico-a 50% increase over the previous year-valued at over $50 million. Unfavorable weather conditions in key growing regions like Yuma, Arizona, and Salinas, California, contributed to reduced domestic yields, prompting greater reliance on imports.

The recall affects multiple states, with confirmed cyclosporiasis cases reported in 45 states as of late July. While 6,707 cases have laboratory confirmation, another 11,500 suspected cases-primarily in Michigan and Ohio-await confirmation.

There have been 423 hospitalizations but no reported deaths. Tracking cyclosporiasis outbreaks is challenging due to the parasite’s long incubation period and the limitations of genetic detection methods used for other foodborne pathogens.

Authorities continue to monitor the situation closely, emphasizing proper hygiene practices and thorough sanitation measures across all stages of food production and distribution to prevent further spread of this illness.
