Kansas City barbecue lives up to the hype — and then some

Last week, when I wrote about the Negro Leagues museum, I mentioned the barbecue. Now let me tell you more.

Why it matters: Kansas City has been, well, talking greasy for years. Opening a barbecue museum? That’s confidence flirting with arrogance.

The big picture: Barbecue is regional identity on a plate — Texas brisket, Carolina whole hog, Memphis ribs. Everybody has a claim.
