Claiming your pancakes are the best — in the world of brunch restaurants, especially — is a lofty assertion.
But Urban Egg has the accolades to back it up. In 2020, Reader’s Digest declared its cinnamon swirl pancakes were the best in Colorado (its home state). Founder Randy Price, a Kansas City native, believes they’re some of the best in Missouri, too.
“The texture’s gonna be a little bit crispier on the outside, a little fluffier on the inside,” Price said inside his restaurant Friday, as a plate with a pancake coated in cream cheese frosting slid across the table. “We spent months developing our recipe.”…
