Located inside Red Rock Casino Resort & Spa, Hearthstone Kitchen & Cellar continues to cement its reputation as one of Summerlin’s go-to destinations for casual fine dining. Leading the culinary program at Hearthstone Kitchen & Cellar is Executive Chef Jason Janson, who has helped shape the restaurant’s elevated approach to Americana cuisine. Janson discovered his passion for cooking after stepping into a kitchen during a hectic service shift while working front-of-house jobs in college. The experience sparked a career pivot that led him from culinary school to professional kitchens across the country, including Philadelphia’s Citizens Bank Park, Colorado’s renowned Broadmoor Hotel, and Denver-based Atomic Provisions. In Las Vegas, Janson refined his craft at the acclaimed é by José Andrés before serving as executive chef of Vetri Cucina Las Vegas under celebrated chef, Marc Vetri. Today, he brings that broad culinary perspective to Hearthstone, crafting a menu inspired by classic American comfort food and the regional traditions of Italian cuisine.

Stepping through Hearthstone Kitchen & Cellar’s oversized sliding doors, guests are welcomed into a warm space defined by dark green interiors and an expansive bar that anchors the restaurant’s lively atmosphere. The interior blends upscale comfort with a relaxed social vibe, featuring a lounge area outfitted with plush couches, chairs, marble tables, and interactive games. A glass wine cellar adds to the restaurant’s sophisticated aesthetic, while numerous TVs throughout the space make it an ideal destination for catching sporting events. Booths, traditional tables, and high-top seating provide a variety of dining experiences, creating a versatile setting that transitions seamlessly from casual happy hours to elevated dinners and weekend brunch.

The restaurant’s menu highlights artisanal salads, shareable plates, and signature entrées designed to pair seamlessly with its curated wine list and handcrafted cocktails. The dinner menu at Hearthstone Kitchen & Cellar reflects Chef Janson’s elevated yet approachable culinary style. Guests can begin with shareable appetizers such as bacon-wrapped dates stuffed with chorizo, spicy shrimp scampi skillet, Baja kanpachi crudo, or hand-cut beef tartare, while the raw bar offers oysters, jumbo shrimp cocktail, and chilled Maine lobster tail. A fan-favorite shareable dish, the Tuna Pizza features a crisp, crunchy base layered with yellowfin tuna, olive oil, truffle aioli, and fresh cilantro.

Hearthstone’s entrée selection ranges from rotisserie chicken and pan-seared sea bass to indulgent offerings such as truffle penne pasta, prime rib, and a bucket of fried chicken served with house-made sauces and buttermilk biscuits. The restaurant also features artisan pizzas, hearty sandwiches, and burgers, including the Prime Rib French Dip and Double Smashed Burger, as well as vegan-friendly dishes such as eggplant parmesan and vegan cheese pizza.

Memorial Day celebrations on May 25 will bring a lineup of seasonal dishes and cocktails.
