Denver diners are getting a shorter, cheaper way into The Wolf’s Tailor universe this summer. Sheep, a three-month residency from Id Est Hospitality, is taking over the sixth-floor rooftop of the Clayton Hotel & Members Club in Cherry Creek from July 8 through October 4. The pop-up will serve a four-course, choice-driven tasting menu for $95, a trimmed-down spin on the group’s higher-priced Wolf’s Tailor experience. Organizers say the goal is to translate the restaurant’s open-fire, zero-waste ethos into a more compact, shareable format tailored to the neighborhood crowd.
A Smaller Wolf’s Tailor For Cherry Creek
Id Est founder Kelly Whitaker says Sheep was dreamed up as a more approachable entry point into the Wolf’s Tailor world. “I wanted to get people that abbreviated experience at a lower price point,” he explained, according to Westword. The outlet notes that Id Est will keep the original $225 Wolf’s Tailor experience in play while offering the $95 abbreviated menu, giving diners a choice based on time, budget, or how adventurous they are feeling.
