Food for Though: Inspection violations include rice-temperature issue; top performers named

LUBBOCK, Texas (KCBD) – There’s a mix of good and bad news in this week’s Food for Thought… including a violation that may need a little explaining.

China Star Asian Buffet at 1919 50th had 17 violations.

  • Rice was not at least 135 degrees.
  • Normally, foods like cooked rice must be kept above 135 degrees or below 41 degrees because bacteria can grow quickly. The restaurant is adding vinegar to the rice to lower its pH so harmful bacteria can’t grow as easily; however, it has not received approval from the health department to do that.
  • The dishwasher was not sanitizing.
  • Water was draining onto the floor from the dishwasher.
  • Cold water pressure at the three-compartment sink was not adequate.
  • No paper towels were available in the employee restroom.

  • A container of sanitizing solution was stored on the floor.
  • Ready-to-eat ice cream cones were stored out of the original packaging and not stored in alternate packages, covered containers or wrappings.
  • Frozen condensate had accumulated on equipment and packaged food. The contents of the packages were not compromised.
  • Ready-to-eat chicken was cooling in containers that were not loosely covered or protected from overhead contamination.
  • A single-service article was used as a scoop in a container of bacon bits.
  • The cover of an ice bin was soiled with brown debris.
  • An employee’s personal food and backpack were stored above clean utensils in the ware-wash area.
  • A cabinet under tea dispensers was soiled.
  • Litter was present in the area behind the ice machine.
  • Grease and food residue were on the floor and wall at the fryers.
