NEW ORLEANS (WGNO) — A Massachusetts chef took home the crown at the 22nd annual Great American Seafood Cook-Off in New Orleans on Saturday, July 25.
Chef Quang Tran, of The Shawmut Inn and Hope You’re Here Hospitality Group, is the third Massachusetts chef to win the title in the last five years.
For his winning dish, Tran made “Dou of New England Lobster,” which was a tempura lobster lollipop with lime granita and citrus aioli. To accompany this, he also had a lobster ceviche with roasted corn, yuzu, pink peppercorn, crispy sweet potato and green crab nage.
“Hearing my name called was an incredible feeling,” Tran said. “As chefs, everything we do starts with exceptional ingredients, and we’re fortunate to have some of the finest seafood and agricultural products in New England.”…
