Tom and Jerry’s owner plans to acquire Rockford-area Beef-a-Roos

LOVES PARK, Ill. (WIFR) – Following the closure of multiple Rockford-area Beef-a-Roo restaurants, a former competitor hopes to rescue the local locations of the beloved fast-food chain.

Last week, Beef-a-Roo employees reported they received an email from Elysian Capital, the Texas-based private equity firm that managed the more than two dozen locations. Since then, all eight Winnebago County Beef-a-Roo locations shuttered.

That’s when Tom and Jerry’s owner Robert Grottke stepped in to help, by hiring former workers and honoring customer coupons…
