SAVANNAH, Ga. (WSAV) — Rollin’ Gluten Free is the newest cottage bakery making waves in Savannah’s home‑baked food scene — and it’s doing so with a mission that goes far beyond delicious pastries.
Founded by home baker Meredith Rank, Rollin’ Gluten Free is rooted in their personal health journey, relentless culinary curiosity and refusal to accept that gluten‑free food should ever taste like a compromise.
Meredith lives with Hashimoto’s disease, an autoimmune condition that often improves with the removal of gluten. That shift forced them to rethink everything they knew about baking. And as someone who has always loved food and feeding people, they embraced the challenge head‑on.
“I’ve always enjoyed being in the kitchen, whether that’s cooking or baking and I’m really good at both,” Meredith says. “And so it’s been really nice to be able to translate that into my gluten-free journey.”…
