New food truck features ‘four nations’ of cooking

A new addition to the food truck scene in Sioux Falls draws on the owner’s heritage and her love for cooking different types of cuisine.

Four Nations Food Truck features Native American, Mexican, Asian and American food, owner Maxi Southard said.

“It will be a rotating menu,” said Southard, a member of the Cheyenne River Tribe. “Each one will be something different.”

Offerings include dishes like Indian tacos, buffalo burgers, wojapi, breakfast burritos, tacos, tamales, egg rolls, stir-frys, barbecue, burgers, hot dogs and chili cheese fries.

Eventually, she might do a buffalo stew with wild rice and use elk meat once she makes connections with wild game suppliers. Southard envisions making comfort foods like tater tot hotdish, “something simple that you don’t necessarily get from a food truck.”…
