SYRACUSE, N.Y. (WSYR) — The name says it all. Fair Deli has become integral to the Great New York State Fair, especially since the food truck arrived near the Midway five years ago.
It may only look like a food truck out front, but hungry fair-goers wouldn’t have their crunchy dogs and Dr. Pickle sodas without all the hard work that goes on out back.
“We have to build a mobile restaurant here to last the 13 days and to serve tens of thousands of people; a lot goes into that,” Zach Marji, the food truck’s owner, said. “A lot of it is having enough food to serve.”…
