Brewerton, N.Y. — What the heck is a black onion?
I muttered the question to myself while scanning the burger section of the menu at Brewerton’s Bear Creek Restaurant and seeing the reference repeatedly listed as a topping. Our waitress wasn’t even sure what it was.
Apparently, a black onion is the cousin of black garlic. Yellow onions are heated and fermented in ovens for multiple weeks, which turns them soft and black, resulting in soy- and balsamic-like flavors…
