Bait shop-themed bar and restaurant opens in Minneapolis on Friday

A new bar is opening where you can wistfully discuss the one that got away.

Centro Restaurant Group is opening Bill’s Bait Shop, a restaurant and bar in south Minneapolis, on Friday, Aug. 7.

The new concept is described as a culinary homage to Minnesota’s fishing culture and northwoods cabins from the group behind Centro, Vivir, Bina’s Bar, and Hippo Pockets.

It has set up shop in the former home of Chicago’s Taste Authority at 3101 42nd St., and is a tribute to Centro owner Jami Olson’s grandfather, Bill. You’ve probably already guessed that Bill was a big fishing fan…
