Round Rock, meet your new breakfast stop.
Eggman ATX opened its first Round Rock location in May 2026, right at the edge of Old Settlers Park and across from the Dell Diamond. It is the fourth Eggman in Central Texas and the first one outside Austin, and it brought something our side of the metro did not have much of: a true New York-style bacon, egg and cheese on a roll.
If you have spent any time in New York, you know the sandwich. Hot, fast, wrapped in foil, handed over a counter before you are fully awake. Austin does breakfast tacos better than just about anywhere, but the bodega roll has been a harder thing to find around here.
From a Trailer to Four Locations
Eggman started with a Queens, New York native who came to Austin and could not find the breakfast he grew up eating. So he built it himself, working solo out of a trailer. Word got around, the lines got longer, and he started hiring from the community.
