Travelers passing through Terminal 4 at Phoenix Sky Harbor International Airport are already noticing the gaps where Red Rock Burger, Blue Mesa Tacos, and Wildflower Bread Company used to be. Those three long-running pre-security spots closed on July 15 to make way for a sweeping concessions overhaul that will bring seven new local, chef-driven restaurants and four retail shops to the airport’s busiest terminal.
Phoenix aviation officials approved the new restaurant concepts to replace underperforming vendors, according to The Arizona Republic. Under the approved plans, concessionaire HMSHost is bringing three Arizona chef-driven venues to Terminal 4: The Macintosh and The Collins Small Batch Kitchen, both from Chef Christopher Collins, and The Mexicano by Chef Joey Maggiore, as detailed by Daily Independent. SSP America, meanwhile, is introducing Cactus & Cow Burger Bar by Chef Mark Tarbell, the woman-owned downtown Phoenix craft brewery Greenwood Brewing, Ingo’s Tasty Food, and The Farm at South Mountain, which folds in Morning Glory Café and The Bar at PHX.
The seven dining additions aren’t the only new business arriving in the terminal. Aviation officials also approved four new retail stores operated by Paradies Lagardère Travel Retail — Saguaro Mercantile, Univision, Camelback Provision Express, and The Prickly Pear — broadening the refresh beyond food and drink, per the same Daily Independent report.
A Phased Build to Limit Disruption
Aviation officials first presented the concessions overhaul to the Phoenix Aviation Advisory Board’s Business and Development Subcommittee in December 2025, establishing a phased construction timeline meant to align with terminal operations and begin opening venues in late 2026, the outlet reported. As of the aviation department’s most recent report, two of the approved restaurant concepts are already under construction inside Terminal 4, though exact opening dates for each individual concept have not been announced.
