Cousins Maine Lobster, the world-famous lobster roll brand that became a household name after its viral appearance on Shark Tank, has officially announced its first-ever expansion into the Land of Enchantment. The brand is bringing its signature sustainable Maine lobster and “shore-to-door” experience to New Mexico with a new food truck based in Albuquerque.
The launch marks a significant milestone for the franchise, which has grown from a single truck in Los Angeles to a global fleet of over 60 units and several brick-and-mortar restaurants.

New Mexicans will no longer have to travel to the coast to get a taste of authentic Maine seafood. The new mobile unit is designed to serve the brand’s most iconic, chef-driven menu items:
- Maine & Connecticut Rolls: The fan favorites—served either chilled with a touch of mayo or warm with melted butter—feature 100% premium North Atlantic lobster.
- Lobster Tots & Tacos: For those looking for a twist on the classics, the truck will offer their famous tater tots topped with lobster meat and cilantro lime cream, alongside lobster-filled tortillas.
- New England Clam Chowder: A signature side that brings the traditional flavors of the Northeast to the Southwest.
