A locally owned coffee shop that debuted in Meridian recently already has its eye on expansion.
Mindful Coffee Co, 4610 N. Linder Road, suite 105, is headed to a second location in downtown Boise. The plan is to open sometime in fall inside the Broadstone Saratoga building, Mindful Coffee Co announced on social media. Joining the mixed-use apartment complex at 12th and Grove streets, Mindful Coffee will take over a 919-square-foot space, according to paperwork with the city.
Since opening its Meridian shop in March, Mindful has attracted customers with a “mindful” menu approach. “We serve organic, fair trade-certified coffee,” Mindful’s website explains, “alongside a thoughtfully crafted gluten-free kitchen made with clean ingredients and no seed oils.”…
