Counter-culture pizzeria Mellow Mushroom plans return to Lexington, other cities

LEXINGTON, Ky. (FOX 56) — After multiple locations in Lexington and other cities closed during the COVID-19 pandemic, a pizza company known for its imaginative pizzas and psychedelic atmosphere is eyeing a return to central and southern Kentucky communities.

In a June 8 article, parent company 1851 Franchise announced that Mellow Mushroom would be expanding across Kentucky through a new three-unit development agreement with John and Whitney Bowling, who currently own a group of gas stations in the Bluegrass.

Company leaders said the Bowlings were “looking at sites” in the Sir Barton Road area, hoping to next expand to Richmond and eventually look to London, “though the final breakdown of the three-unit agreement is still being finalized,” copy editor Chris Irby wrote on 1851’s website.
