Ask Grant Krueger if any of his restaurants offer delivery, and the Union Hospitality Group owner has to hold back the urge to go full-on Seinfeld “Soup Nazi,” wincing at what can happen to a carefully composed plate once it leaves the dining room.
“You’ve got a chef-driven dish with a piece of seafood over a rice pilaf, some sprigs of sage, a charred lemon and some aioli on the side,” Krueger said patiently. “It’s got ingredients put together for height and drama and color. That doesn’t translate very well when shoved into a to-go box, steaming in the back of someone’s Toyota Camry for 29 minutes.”
Yet it’s not “No delivery for you!” All three of Krueger’s St. Philip’s Plaza restaurants — Union Public House, Reforma Modern Mexican and Proof Artisanal Pizza & Pasta — offer delivery through DoorDash and Grubhub…
