Grilled pork chops and Cajun pasta from Midnight Munchies Inc.

This is a new spot I just discovered — Midnight Munchies, open 8 p.m. to 1 a.m. only on weekdays. Boy, I’m glad I made the 19-minute drive to north Baton Rouge, and I’d absolutely do it again after trying two entrees on a Thursday night.

I opted for the grilled pork chops, which came with a choice of two sides, so I chose the collard greens and potato salad. My partner ordered the Cajun pasta with chicken, and we split the dishes so we could try both. The food is cooked to order, but the wait is well worth it in my opinion.

These were the best pork chops I’ve ever had in my life. They can be ordered as fried, but I’m glad I chose grilled because the sear was perfection, which brought out the flavors from the peppery seasoning blend. The plate also came with a couple pieces of toast that tasted closer to French toast with a caramelized flavor. It was sweet, buttery and delicious.

The Cajun pasta was also something to rave about. It was spicy — with what may have been a cayenne pepper kick), cheesy and the perfect consistency…
