New Spanish food truck, Carousel, opens in Springfield

A new food truck, Carousel, is opening in Springfield, bringing Spanish cuisine to Lane County in a way Ryan Josef-Maier doesn’t think the city has seen quite yet. His menu boasts small dishes packed with big flavor, from Spanish tortillas to tempeh chorizo skewers.

I spoke to Josef-Maier about how he transitioned from consultant to chef, and from California to Seattle to Eugene.

In other restaurant news, Eugene’s Siesta Seven has served its last avocado toast. The cafe and bistro located south of campus was loved for its laptop-friendly energy, Latin-inspired dishes, and overall good vibes. Long-time restauranteur and owner Sara Willis took to Instagram to share the restaurant is permanently closed, and said “no more restaurants for this girl.”
