Wisconsin Brewing Company recreates historic Schlitz beer using 1948 recipes

VERONA, Wis. (WMTV) – Inside Wisconsin Brewing Company on Saturday, brewers weren’t just making beer, they were reviving a piece of Wisconsin history.

With Pabst’s blessing, Wisconsin Brewing Company Brewmaster Kirby Nelson and his team recreated a limited batch of Schlitz beer using recipes and brewing records dating back to 1948. The throwback brew comes after Pabst announced it would end production of Schlitz after more than 175 years.

Brewers spent the day carefully balancing temperatures and timing during the brewing process, working to create what’s known as “wort,” the liquid that eventually becomes beer.

“So right now, we’re just in a mash heat up cycle,” Head Brewer Luke Foth said. “So, we’re having steam go into the jackets on our mash tun here.”…
