Bagel Shake-Up: Metro Detroit Bruegger’s Shops Get Einstein Makeover

Bruegger’s regulars in southeast Michigan are in for a jolt with their morning coffee this spring and summer. Four shops in Ann Arbor, Bloomfield Hills, East Lansing and Royal Oak are being converted into Einstein Bros. Bagels, swapping out Bruegger’s signs and menus for Einstein Bros.’ branding and sandwich lineup. The change will roll out through staggered, multi-week remodels, and workers at those locations are being offered the chance to stay on under the new banner, according to the Detroit Free Press.

Local reporting indicates the four locations will be shuttered and revamped over the coming weeks. The East Lansing shop has already closed for construction, and the Royal Oak bakery has listed May 11 as its last day of business before renovations begin. The conversions will add four stores to Einstein Bros.’ Michigan footprint, with company materials saying each remodel typically means four to five weeks of closure per bakery, as noted by the Detroit Free Press.

Design and menu changes

Jessica Serrano, chief marketing officer for Bagel Brands, told the Free Press the revamped stores will showcase Einstein Bros.’ “Elevate the Morning” design and an updated menu. She described Einstein Bros.’ bagels as “distinctly lighter and less dense” than what Bruegger’s fans may be used to. The company says that texture is meant to pair with its range of sandwiches and shmears, and it is actively hiring across Michigan as the conversions move ahead, according to the Detroit Free Press.

Part of a bigger rollout

The Michigan switch is one piece of a broader national effort by Einstein Bros. to refresh and grow the brand. Company press materials describe the “Elevate the Morning” format as a blueprint for future locations, with early remodels, including former Bruegger’s shops, helping shape a larger rollout as new bakeries open in 2026.
