Inside the graveyard shift at New Orleans area 24-hour diners: ‘We save lives come 3 a.m.’

It was just after midnight on Bourbon Street when 57-year-old Tim Brouillette walked into Clover Grill for the third time in four days and took a seat at the counter.

Crowds of tourists were still streaming up and down the neon-soaked street, drinks in hand, searching for the next best bar on a Friday night. The smell of sizzling burgers called Brouillette back to the near century-old haunt he frequents on trips to New Orleans.
