Gambit: How did you get interested in becoming a chef?

Christopher Vazquez: I am from Boston. I moved down here when I was a teen because my father worked for Al Copeland. He was a regional manager for Popeyes. My original, first job in food was at Popeyes Fried Chicken seasoning the chicken.

I always had a cooking job. I always had a passion for it because I come from an Italian-Cuban family, who was deep rooted in food. None of them were chefs, but we always had a love for food.

Eventually I went to college at Delgado (Community College). I did my externship at Mr. B’s. I did it when Ralph (Brennan) still owned the restaurant, and it moved over to Cindy (Brennan)…
