NEW ORLEANS (WGNO) — A new restaurant is bringing Spanish Basque flavors and old-world cooking to Freret Street. Dolfy’s, from Chef Adolfo Garcia Jr. and his partner Sophia Petrou Garcia, opened in March.
“New Orleans has Spanish roots just as deep as its French ones, but nobody’s really celebrating that food here,” Garcia said. Basque cuisine is “so much more than paella and sangria, and I’m excited to share it with everyone.”
A feature of Dolfy’s menu is the pintxos, small bites from the Basque region in Northern Spain, meant to be ordered freely and shared over drinks. Some of Dolfy’s pintxos offerings include braised oxtail croquettes, spicy mussels with chorizo and chips y jamón ibérico.

For the main course, Dolfy’s signature dish is a grilled acorn-fed ibérico pork pluma, a cut of pork that can only be found in New Orleans at Dolfy’s, according to the chef. The pork is served over potato purée with a foie demi-glace,
